Training Methods

Every business is born from an idea, but it grows thanks to the people who carry it forward. The training methods developed by Gaetano Lanza are rooted in this belief: that technical skills and personal growth must go hand in hand to build businesses that are solid, human, and inspired.

The Ristoo Method

Happy Restaurateurs

“For those who believe hospitality is more than a profession,
it’s a calling.”

The RISTOO Method – Happy Restaurateurs – is a practical, people-centred training programme designed for those who welcome, serve and lead every day in the world of taste and hospitality.
It’s not just a course, it’s a transformative journey, both professional and personal, shaped over more than ten years of hands-on experience, study, and dialogue.
Born from Gaetano Lanza’s own experience opening and managing restaurants, and enriched by his three-year training in Neuro-Linguistic Programming (NLP), the RISTOO Method brings people back to the heart of hospitality. It speaks the language of those who run dining rooms, wine cellars and kitchens — guiding both people and processes: restaurateurs, wine bar owners, hoteliers, owners of agriturismi, and food entrepreneurs who want to build strong, long-lasting businesses.
In a training landscape often dominated by sales tactics, marketing strategies and food cost formulas, RISTOO goes back to the foundations: authentic relationships, shared motivation, and leadership that inspires trust.
Because no strategy can succeed until the person leading it has truly grown.

A Method for Entrepreneurs & Startups

This path is designed to inspire entrepreneurs and startuppers seeking a more human, conscious and transformative approach to leadership. It was created in collaboration with Francesco Conti of Intelligenza Manageriale®, a business education company where Gaetano Lanza works as a trainer and consultant.
The method supports entrepreneurs and managers in making the most of their existing resources, using practical strategies and an approach focused on developing high-level human qualities: entrepreneurial drive, intuition, and the ability to see the bigger picture.
